The grilled cheese (known where I’m from as a cheese toastie) is the ultimate comfort food. The enjoyment you receive from this humble dish is something you can have whether you’re rich or struggling, because at it’s base it’s nothing more than bread, cheese and butter. Those are three ingredients people have at hand pretty much all the time, so if you’re feeling sad, drunk, hungover, or you just crave that oozing cheese taste, you can make it in a few minutes.

Today though, I’m going to share with you a method of making this humble comfort food that is so good, it will make the warm hug of a loved one feel like a cold slap to the face. The beauty is that it only adds a few extra minutes to what is already an obscenely simple dish, but the payoff you get will mean that you make it that way pretty much all the time.

Ingredients

Bread: A lot of recipes I see for grilled cheese put way too much focus on the bread. Sourdough, fresh loafs of whatever, inch thick slices. People, the star of a grilled cheese is, you guessed it…cheese. The bread is a delivery vehicle, it shouldn’t overshadow the star. So keep the bread part of the equation simple.
